Ingredients
- 2 lb jumbo shrimps (de-veined, shell on)
- 2 medium Jalapeño (sliced)
- 1 medium ginger (cut into slices)
- 1/2 white onion (cut into thick slices)
- 3 green onion stalks (cut into 1" pieces)
- 1/2 head garlic (minced)
- 6 oz potato starch
- salt and pepper
- 1 gallon cooking oil
For the sauce:
- 1 tbsp soy sauce
- 2 tbsp oyster sauce
- 2 tbsp sugar
- 1/2 tbsp chicken powder
- 1/2 tbsp sesame oil
- 1 tbsp dark soy sauce
- 3 tbsp water
Procedure
In a deep fryer, add 1 gallon of cooking oil and set to 375 F.
Lightly coat your jumbo shrimps with potato starch, salt, and pepper.
Once the oil is hot, add your shrimp and allow to cook for 3 minutes. Then allow to cool on a plate with a paper towel. Set aside for now.
In a small bowl, combine all the ingredients listed under “for the sauce”. Set aside.
In a large wok, heat 2 tbsp of oil over medium high heat. Once the oil is hot, add your sliced onion and ginger. Cook for 1 minute.
Add your sliced jalapeño and ginger. Cook for another minute.
Add your fried shrimps and sauce mixture. Combine and cook for another minute.
Add your green onions and turn off the heat. Combine again to make sure everything is well mixed together.
Serve hot with a side of garlic noodles.
