Vietnamese Stuffed Tofu and Tomato Pork - Dau Hu Chien Ca Chua Thit Bam

Ingredients:

  • 3 cloves garlic (minced)
  • 1 shallot (minced)
  • 2 large tomatoes
  • 2 Roma tomatoes (diced)
  • 20 oz fried tofu (cut into 2-3” cubes)
  • 1 cup water
  • 2 tbsp fish sauce
  • 1/2 tbsp sugar
  • 1/3 tbsp MSG
  • 6 tbsp oil
  • green onions (to garnish)

For the filling:

  • 0.5 lb ground pork
  • 1/2 tbsp fish sauce
  • 1/3 tbsp sugar
  • 1/4 tbsp MSG
  • black pepper

Instructions:

  1. Combine all the ingredients listed “for the filling” in a small bowl and set aside.

  2. Cut and remove the core of the 2 large tomatoes. Dice the core and combine with the diced Roma tomatoes - set aside.

  3. Stuff the 2 large tomatoes and fried tofu with the meat filling. Set aside.

  4. In a large pan, heat 6 tbsp cooking oil over medium-high heat. Once hot, shallow fry your stuffed tomato and tofu (meat side down first) until lightly brown. Remove and set aside.

  5. In the same large pan with excess oil from the shallow frying, add the minced garlic and shallots. Sauté for 30 seconds.

  6. Add your diced tomatoes and sauté for another minute.

  7. Add 1 cup of water and your seasonings: fish sauce, sugar, MSG. Then add back your fried tomato and tofu.

  8. Cover and allow to simmer for 20 minutes.

  9. After 20 minutes, take off the lid and allow to simmer for 5 minutes.

  10. Garnish with green onions and serve with rice.
