Chinese Sausage Fried Rice - Com Chien Lap Xuong

We always had Chinese Sausage fried rice growing up (cooked by my dad). I never knew of the other variations (chicken, pork, shrimp) of fried rice until I later when we dined out 😂

Ingredients

  • 6 cups cooked white rice (at least a day old)
  • 4 Tbsp oil
  • 1 chinese sausage (diced)
  • 3 garlic cloves (minced)
  • 2 eggs (beaten)
  • 1 Tbsp soy sauce
  • 2 Tbsp oyster sauce
  • ½ tsp sugar
  • ½ cup frozen veggies (peas and carrots)
  • ½ tsp chili oil (optional)
  • green onions (to garnish)
  • cilantro (to garnish)
  • 1/8 lb shrimp

Instructions:

  1. Heat 1 tbsp oil in the wok. Add Chinese sausage.

  2. Once the sausage is starting to brown and shrimp is cooked, remove from heat and set aside.

  3. In the wok, add 1 tbsp oil and add your beaten eggs. Stir and scramble until fully cooked. Remove from heat and set aside.

  4. Add 2 tbsp to the wok over high heat and add your garlic and onions. Cook until fragrant and add your rice. Break all the rice clumps until it’s completely even. Then add your sauces.

  5. Add your frozen veggie mix, Chinese sausage, shrimp, and eggs back. Combine well.

  6. Turn off the heat and add green onions and cilantro.

  7. Serve hot (with extra sriracha or chili oil for an extra kick!)
