Ingredients
Serves 4 - Makes 2 omelettes
- 1/8 large white onion (sliced)
- 2 tomatoes (sliced)
- 3 bundles of green onions (sliced)
- 1/2 lb ground pork
- 5 eggs
- 1/3 tbsp sugar
- 1/4 tbsp MSG
- 1 1/2 tbsp fish sauce
Procedure
In a large mixing bowl, combine ground pork, eggs, sugar, MSG, and fish sauce. Mix well until well combined. Set aside.
In a large pan, heat over medium-high heat. Spray with cooking spray or add 2 tbsp oil. Wait until hot. Then add half your onion and half your tomatoes.
Sauté onion and tomatoes until fragrant - about 1 minute. Add half the egg mixture. Lower the heat to low and allow the omelette to cook for 8 to 10 minutes (or until 80% cooked). Be careful not to burn the bottom.
Flip your omelette (I use a plate to help me flip the omelette) and allow the other side to cook for an additional 3-5 minutes or until fully cooked.
Repeat the steps for the second omelette.
Serve this hot with a side of rice.
