Homemade Chili Oil - Ot Sate

Ingredients

  • 1 cup oil
  • 1 cup Thai dry chili flakes
  • 2 tbsp annatto seeds
  • 1/2 cup garlic (minced)
  • 1/2 cup shallots (minced)
  • 2 tsp salt
  • 2 tsp sugar
  • 1 tsp MSG
  • 2 tbsp fish sauce

Procedure

  1. Add 2 tbsp water to a wok on high heat.

  2. Cook the minced chicken for 10-12 minutes or until fully cooked.

  3. Allow the chicken to cool down before removing it from the wok.

  4. Strain the cooked chicken into a mixing bowl.

  5. Add all the remaining ingredients and mix until well combined.

  6. Serve with lettuce, cucumbers, and/or rice.
