Chicken Laab - Laab Gai

Serves 6-8

Ingredients

  • 3 lb chicken breast (minced/ground)
  • 1 shallot (sliced)
  • 1/2 medium red onion (sliced)
  • 2 cups mint leaves (washed)
  • 2 cups long string bean (sliced)
  • 6 tbsp roasted rice powder (‘thinh’ in Vietnamese)
  • 6 tbsp fish sauce
  • 1 1/2 limes (juiced)
  • 2 tbsp Thai dry chili flakes
  • 1/2 tsp MSG
  • 1/4 cup green onions (sliced)
  • 1/4 cup cilantro (sliced)

Procedure

  1. Add 2 tbsp water to a wok on high heat.

  2. Cook the minced chicken for 10-12 minutes or until fully cooked.

  3. Allow the chicken to cool down before removing it from the wok.

  4. Strain the cooked chicken into a mixing bowl.

  5. Add all the remaining ingredients and mix until well combined.

  6. Serve with lettuce, cucumbers, and/or rice.
