Serves 6-8
Ingredients
- 3 lb chicken breast (minced/ground)
- 1 shallot (sliced)
- 1/2 medium red onion (sliced)
- 2 cups mint leaves (washed)
- 2 cups long string bean (sliced)
- 6 tbsp roasted rice powder (‘thinh’ in Vietnamese)
- 6 tbsp fish sauce
- 1 1/2 limes (juiced)
- 2 tbsp Thai dry chili flakes
- 1/2 tsp MSG
- 1/4 cup green onions (sliced)
- 1/4 cup cilantro (sliced)
Procedure
Add 2 tbsp water to a wok on high heat.
Cook the minced chicken for 10-12 minutes or until fully cooked.
Allow the chicken to cool down before removing it from the wok.
Strain the cooked chicken into a mixing bowl.
Add all the remaining ingredients and mix until well combined.
Serve with lettuce, cucumbers, and/or rice.
