Ingredients
- 2 medium Mackerel or 1 large Mackerel
- 4 tbsp oil
- salt and pepper
- 3 cloves garlic (minced)
- 1 tomato (sliced)
- 2 tbsp fish sauce
- 1/2 tbsp sugar
- 1/3 tbsp MSG
- 2 Thai peppers
Procedure
Marinate your fish with salt and pepper for at least 30 minutes.
In a large pot, add 4 tbsp oil over medium-high heat. Once hot, fry each piece of fish until golden (approximately 2-3 minutes per side). Remove and set aside.
Using the same oil from the pan, add your minced garlic and sliced tomato. Allow it to cook until fragrant - 1 min.
Add back your fried fish cuts and add enough water to barely cover the fish. Lower the heat to simmer.
Add fish sauce, sugar, MSG, and Thai peppers. Allow the fish to cook on simmer for 60 minutes.
Serve this hot with rice. The sauce is AMAZING - don’t waste it and eat it with rice!
