Vietnamese Bittermelon Egg - Muop Dang Xao Trung

Ingredients

  • 3 large bittermelon
  • 3 eggs
  • 1/2 head garlic (minced)
  • 2 tbsp cooking oil
  • 1/4 cup water
  • 1/3 tbsp salt
  • 1/6 tbsp sugar
  • 1/6 tbsp MSG

Instructions

  1. Prep and wash your bittermelon. Remove the ends and discard. Remove the seeds from the bittermelon and cut into thin slices. Set aside.

  2. In a small bowl, crack 3 eggs and beat until well combined. Set aside.

  3. In a large wok, add 2 tbsp of cooking oil over medium-high heat. Once the oil is hot, add your garlic. Allow it to get golden - 30 seconds.

  4. Add your bittermelon slices and stir well. Cook for 2 minutes.

  5. Add 1/4 cup water and lower the heat to medium to help steam the bittermelon. Allow this to cook for 5 minutes or until the water is fully evaporated and the bittermelon turns a yellow-green color.

  6. Move the bittermelon to half of the wok. Spray the empty side of the wok with some cooking spray or oil. Add your beatened eggs.

  7. Gently stir the egg and wait for it to solidify - 1 min. Then combine the eggs with the bittermelon. Season with salt, sugar, and MSG.

  8. Plate and top with black pepper. Serve this with a side of rice.
